Instructions
In a mixing bowl, combine the olive oil, lemon zest, lemon juice, garlic powder, onion powder, black pepper, salt, and smoked paprika. Mix until well combined.
Add the chicken pieces to the bowl and toss them in the marinade until fully coated. Let it marinate for at least 15 minutes (or up to 2 hours in the fridge for more flavor).
Preheat the air fryer to 400°F (200°C) for about 5 minutes.
Place the marinated chicken bites in the air fryer basket in a single layer, making sure not to overcrowd them.
Cook at 400°F (200°C) for 10-12 minutes, shaking the basket halfway through the cooking time for even cooking, until the chicken is golden and the internal temperature reaches 165°F (75°C).
Once cooked, remove the chicken bites and let them rest for a couple of minutes.
Garnish with chopped fresh parsley before serving.
Notes
Marinating for longer enhances the flavor.
