Buffalo Chicken Burritos

Instructions
In a large mixing bowl, combine the cooked shredded chicken and buffalo sauce. Mix until the chicken is well-coated.
In a separate bowl, mix the cooked rice with a pinch of salt and pepper.
Lay out a flour tortilla on a clean surface. Spoon a generous portion of the buffalo chicken mixture onto the center of the tortilla.
Add a portion of the flavored rice on top of the chicken.
Sprinkle shredded cheddar cheese, blue cheese crumbles, shredded lettuce, diced tomatoes, and sliced green onions on top.
Fold the sides of the tortilla inward over the filling, then roll it up from the bottom to create a tight burrito shape.
Heat a skillet over medium heat with a drizzle of olive oil. Once hot, place the burritos seam-side down in the skillet.
Cook for about 2-3 minutes on each side until the tortillas are golden brown and slightly crispy.
Remove the burritos from the skillet and let them rest for a minute before slicing in half.
Notes
Serve with extra buffalo sauce and ranch or blue cheese dressing for dipping.
