In a bowl, mix the shredded chicken with buffalo sauce until well combined. Adjust the amount of sauce to your preferred spice level.
Brush the flatbread lightly with olive oil for added flavor and crispiness.
Spread the buffalo chicken mixture evenly over the flatbread.
Sprinkle shredded mozzarella cheese on top of the chicken. If using, add the blue cheese crumbles for an extra kick.
Season with salt and pepper to taste.
Place the flatbread on a baking sheet and bake in the oven for 15-20 minutes, or until the cheese is melted and bubbly and the edges of the flatbread are golden brown.
Remove from the oven and let it cool slightly.
Garnish with sliced green onions and chopped parsley before slicing into pieces.
