In a mixing bowl, combine the shredded chicken, mashed avocado, mozzarella cheese, cream cheese, mayonnaise, lime juice, garlic powder, cumin, and chili powder. Mix until all ingredients are well incorporated and creamy. Season with salt and pepper to taste.
Preheat a skillet or griddle over medium heat.
Spread a thin layer of butter on one side of each slice of bread.
Place two slices of bread, buttered side down, onto the skillet. Generously spoon the chicken and avocado mixture onto each slice.
Top with the remaining slices of bread, buttered side up.
Cook for about 3-4 minutes, until the bottom slice is golden brown and crispy. Carefully flip each sandwich and cook the other side for an additional 3-4 minutes, until golden and the cheese is melted.
Once both sides are crispy and golden, remove the sandwiches from the skillet and let them cool for a minute before cutting.
Notes
Cut the melts in half diagonally and serve on a platter with a side of fresh salsa or a mixed greens salad for added color. Garnish with lime wedges for a refreshing touch.
