Instructions
In a bowl, mix the cooked ground beef (or black beans), cooked rice, taco seasoning, and diced tomato until well combined.
Lay a tortilla flat on a clean surface. Start by placing a quarter of the cheese mixture (half cheddar, half Monterey Jack) in the center of the tortilla, followed by a quarter of the beef/rice filling. Add a dollop of sour cream, a few slices of avocado, and a sprinkle of cilantro on top.
Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom to the top, ensuring the filling is secure inside.
Heat a grill pan or a skillet over medium heat and lightly grease it with cooking spray or butter. Place the burritos seam-side down on the pan. Grill for 3-4 minutes per side, or until they are golden brown and crispy, and the cheese is melted inside.
Remove the burritos from the pan and let them cool for a minute. Slice them in half diagonally and serve with extra sour cream, salsa, and a sprinkle of cilantro on top.
Notes
For a vegetarian option, substitute ground beef with black beans.
