Instructions
Preheat your oven to 375°F (190°C).
In a small skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
In a bowl, mix together the softened cream cheese, half of the shredded cheddar cheese, paprika, salt, and pepper; stir until well combined.
Spread the cream cheese mixture evenly on one side of each slice of bread.
In another bowl, crack the eggs and whisk them until fully blended.
Place the slices of bread (cream cheese side up) on a baking sheet. Create a small indentation in the center of each slice using the back of a spoon.
Pour a beaten egg into the indentation of each toast slice, taking care to keep it contained.
Top each toast generously with the remaining cheddar cheese.
Bake in the preheated oven for 12-15 minutes or until the eggs are set and the cheese is bubbly and golden.
Remove the toast from the oven and let it cool slightly. Sprinkle with fresh chives for garnish.
