fresh cheese tortellini

can (14.5 ounces)
diced tomatoes with green chilies

dried oregano

Instructions
In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until the onion becomes translucent.
Stir in the minced garlic, diced carrots, and celery. Cook for an additional 5 minutes, stirring occasionally.
Pour in the chicken broth and bring the mixture to a gentle boil.
Once boiling, add the cooked chicken, fresh tortellini, diced tomatoes (with their juice), dried oregano, dried basil, salt, and pepper.
Reduce the heat to a simmer and cook for about 5-7 minutes, or until the tortellini is tender.
Stir in the baby spinach and allow to wilt for 1-2 minutes.
Taste and adjust seasoning if necessary.
Serve hot, garnished with fresh cilantro.
Notes
Serve the soup in deep bowls, garnished with additional cilantro leaves and a sprinkle of black pepper on top for added visual appeal.
