In a large mixing bowl, combine the almond flour, rolled oats, and vanilla protein powder. Mix well to ensure there are no clumps.
Add the almond butter, honey (or maple syrup), and vanilla extract to the dry ingredients. Stir until the mixture is well combined.
Sprinkle in the salt and fold in the mini chocolate chips and almond milk. If the mixture feels too dry, gradually add more almond milk until a dough forms.
Using your hands, scoop out about 1 tablespoon of the dough and roll it into a ball. Place the balls onto a parchment-lined baking sheet.
Repeat the process with the remaining dough, ensuring the protein balls are of equal size.
Once all the dough has been rolled, place the baking sheet in the refrigerator for at least 30 minutes to allow the protein balls to firm up.
Serve immediately or transfer the protein balls to an airtight container for storage in the fridge for up to 1 week.
Notes
Arrange the protein balls on a decorative plate and sprinkle some extra mini chocolate chips around them for a pleasing visual touch. Optionally, drizzle with a bit of almond butter before serving.
