In a medium bowl, whisk together the almond milk, cocoa powder, maple syrup, vanilla extract, and sea salt until well combined.
Add the chia seeds to the mixture and stir thoroughly. Make sure there are no clumps of chia seeds.
Cover the bowl and refrigerate for at least 2 hours, or overnight. The chia seeds will expand and create a pudding-like consistency.
Once the chia mixture is set, take it out of the fridge and stir it gently to break up any clumps.
Layer the chocolate chia pudding and fresh raspberries in individual cups or jars. Start with a layer of the chia pudding followed by a layer of raspberries. Repeat until you reach the top, finishing with raspberries.
If desired, sprinkle dark chocolate shavings on top as a garnish for an extra touch of indulgence.
Serve immediately or keep refrigerating until ready to serve.

Serve in clear glass jars to showcase the layers and add a sprig of mint for garnish.
