Instructions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, use an electric mixer to cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
Beat in the eggs, one at a time, followed by the vanilla extract until well combined.
In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and 1 tablespoon of ground cinnamon.
Gradually add the dry ingredients to the wet mixture, mixing just until combined. Be careful not to overmix.
In a small bowl, combine the flour, brown sugar, cold cubed butter, and cinnamon for the streusel. Use your fingers or a pastry cutter to mix until crumbly.
Using a cookie scoop or spoon, drop dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
Evenly sprinkle the streusel topping over each cookie dough ball, pressing lightly to adhere.
Bake the cookies in the preheated oven for 10-12 minutes or until the edges are lightly golden.
Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
