In a large mixing bowl, combine the cottage cheese, honey (or maple syrup), vanilla extract, cinnamon, and lemon juice. Use a hand mixer or whisk to blend until smooth and creamy.
In serving glasses or bowls, layer 1/4 of the cottage cheese mixture at the bottom.
Add a layer of sliced bananas on top of the cottage cheese mixture.
Repeat the layers until the glasses are filled, finishing with a cottage cheese layer on top.
Sprinkle crushed graham crackers over the final layer and garnish with fresh mint leaves.
Chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld together.
Notes
Serve in clear glasses to show off the beautiful layers, and add a banana slice or mint leaf on top of each serving for an extra touch.
