Instructions
Preheat your oven to 350°F (175°C) and grease an 8x8 inch baking pan or line it with parchment paper for easy removal.
In a mixing bowl, combine the cottage cheese, almond butter, and maple syrup. Blend until smooth and creamy using a hand mixer or food processor.
In another bowl, whisk together the blended oats (oat flour), cocoa powder, baking powder, and salt until well combined.
Gradually add the dry ingredients to the wet ingredients, mixing until fully incorporated.
Fold in the dark chocolate chips and nuts (if using) into the batter until evenly distributed.
Pour the brownie batter into the prepared baking pan, smoothing it out with a spatula.
Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out mostly clean (a few crumbs are okay).
Once baked, remove from the oven and let the brownies cool in the pan for at least 15 minutes before cutting them into squares.
Notes
Serve warm with Greek yogurt or ice cream for an extra treat.
