In a bowl, mix sliced chicken with paprika, garlic powder, onion powder, salt, black pepper, and olive oil. Ensure all pieces are evenly coated. Let it marinate for at least 15 minutes for flavors to blend.
Preheat your air fryer to 400°F (200°C) for about 5 minutes.
Place the marinated chicken in the air fryer basket in a single layer, making sure they aren’t overcrowded. Cook for 10-12 minutes, shaking the basket halfway through, until the chicken is crispy and cooked through.
Lay out a tortilla wrap and layer with shredded mozzarella cheese, cooked chicken, baby spinach, and halved cherry tomatoes. Sprinkle a little more mozzarella on top for extra cheesiness.
Starting from one end, carefully roll the tortilla tightly around the fillings. Secure with toothpicks if necessary.
Place the wraps seam side down in the air fryer. Lightly spray with olive oil to help crisp up the outside. Air fry at 400°F (200°C) for 5-7 minutes or until golden brown and crispy.
Remove from the air fryer and let cool for a minute. Slice diagonally and serve with ranch dressing on the side for dipping if desired.
