Instructions
Preheat your air fryer to 400°F (200°C) for about 5 minutes.
In a shallow bowl, combine the grated Parmesan cheese, breadcrumbs, garlic powder, onion powder, oregano, salt, and pepper to create the coating mix.
In a separate bowl, beat the egg until combined.
Dip each zucchini fry into the beaten egg, allowing the excess to drip off.
Then, roll the zucchini fry in the Parmesan-breadcrumb mixture, ensuring it is evenly coated.
Place the coated zucchini fries in a single layer in the air fryer basket. Ensure they aren’t overlapping for the best crispiness.
Lightly spray the fries with cooking spray for extra crunch.
Cook the zucchini fries in the air fryer for 10-12 minutes, flipping them halfway through until they are golden brown and crispy.
Once done, remove them from the air fryer and let cool slightly before serving.
Notes
Serve with marinara sauce or garlic aioli for dipping. Garnish with additional Parmesan and fresh parsley.
