Begin by cutting the peeled potatoes into ½-inch cubes. Rinse the cubes in cold water to remove excess starch, which will help achieve crispiness.
Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper for easy cleanup.
In a large mixing bowl, combine the potato cubes, olive oil, garlic powder, onion powder, smoked paprika, salt, black pepper, and cayenne pepper if using. Toss everything together until the potatoes are well coated in the seasoning mixture.
Spread the seasoned potatoes evenly on the prepared baking sheet, ensuring they are in a single layer for uniform cooking.
Bake in the preheated oven for about 25-30 minutes, or until the potatoes are golden brown and crispy. Halfway through baking, take them out and flip the potatoes with a spatula for even crispiness.
Once done, remove from the oven and let cool for a couple of minutes. Garnish with fresh parsley before serving.
