Instructions
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
In a shallow dish, combine the breadcrumbs, grated Parmesan, garlic powder, oregano, paprika, salt, and black pepper. Mix well to blend the flavors.
In another shallow bowl, whisk together the eggs and Dijon mustard until smooth.
Set up your breading station: Place the flour in a third shallow dish.
Take each cod fillet and lightly dredge it in the flour, ensuring it's fully coated. Shake off any excess flour.
Dip the floured cod into the egg mixture, making sure it’s evenly coated.
Finally, press the coated cod into the breadcrumb mixture until well covered on all sides.
Place the breaded fillets on the prepared baking sheet. Drizzle with olive oil for added crispiness.
Bake in the preheated oven for about 15-20 minutes, or until the cod is cooked through and the crust is golden brown.
Serve with lemon wedges to squeeze over the top for an extra burst of flavor.
Notes
For extra crispiness, use Panko breadcrumbs.
