Crockpot Cajun Chicken Pasta
A creamy and spicy chicken pasta dish cooked in a crockpot, perfect for a hearty meal.

diced tomatoes (canned or fresh)

grated Parmesan cheese

Instructions
Place the boneless chicken breasts in the bottom of the crockpot.
In a separate bowl, combine heavy cream, chicken broth, Cajun seasoning, smoked paprika, minced garlic, and salt and pepper. Mix well.
Pour the cream mixture over the chicken in the crockpot.
Add the diced bell pepper, chopped onion, and diced tomatoes to the crockpot, spreading them evenly over the chicken.
Cover the crockpot and cook on low for 6 hours or on high for 3 hours.
About 30 minutes before serving, add the penne pasta directly into the crockpot. Stir to combine.
Check the pasta after 15 minutes, stir again, and adjust cook time as necessary until the pasta is tender.
Once the pasta is cooked, stir in the grated Parmesan cheese until melted and creamy.
Taste and adjust seasoning if needed, then serve warm, garnished with freshly chopped parsley.
