Instructions
Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking pan.
In a large mixing bowl, prepare the vanilla cake mix according to the package instructions, adding eggs, vegetable oil, and water. Mix until smooth.
Pour the batter into the prepared baking pan and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
Let the cake cool completely, then crumble it into a large bowl.
Add the frosting to the crumbled cake and mix together until fully combined and sticky. You can use your hands for a more thorough mix.
Form small balls (about 1 inch) of the cake mixture and place them on a baking sheet lined with parchment paper.
Refrigerate the cake balls for about 30 minutes to firm them up.
In a microwave-safe bowl, melt the white chocolate chips with the coconut oil in 30-second increments, stirring in between until smooth.
Dip the end of each lollipop stick into the melted chocolate; this helps to secure the stick in the cake pop.
Insert the stick into the center of each cake ball and then dip the cake pop into the melted white chocolate, allowing the excess to drip off.
While the chocolate is still wet, sprinkle your desired toppings (like colored sprinkles) on the cake pops.
Place the dipped cake pops upright in a styrofoam block or a cake pop stand to set.
Once set, enjoy your homemade cake pops or store them in an airtight container.
Notes
You can use any type of frosting you like for added flavor.
