Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
On a lightly floured surface, roll out the puff pastry sheet to smooth out any creases, then cut it into 4 equal squares.
In a mixing bowl, beat the softened cream cheese, powdered sugar, granulated sugar, vanilla extract, egg yolk, and lemon juice until smooth and creamy.
Place a generous spoonful of the cream cheese mixture in the center of each puff pastry square.
Fold the corners of each square towards the center over the filling to create a little bundle. Pinch the corners to seal them.
Brush the tops of the Danish with the beaten egg to give them a beautiful golden finish when baked.
Place the Danish on the prepared baking sheet and bake for 15-18 minutes until the pastry is puffed and golden brown.
Allow them to cool slightly before serving. Optional: top with fresh berries for added color and flavor.
