2cupsmixed vegetables (such as bell peppers, carrots, broccoli, and snow peas)
3clovesgarlic, minced
1tablespoonfresh ginger, grated
0.25cupsoy sauce
2tablespoonsoyster sauce (optional)
1tablespoonsugar (brown sugar recommended)
2green onionsfinely chopped
1teaspoonsesame seeds (for garnish)
Instructions
Cook the Noodles: Bring a large pot of water to a rolling boil. Add the egg noodles and cook according to the package instructions, typically until al dente. Once cooked, drain the noodles well in a colander and set aside, ensuring they don’t stick together.
Stir-fry the Chicken: In a large skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat. Once the oil is shimmering, add the sliced chicken. Stir-fry for approximately 5-7 minutes, stirring occasionally, until the chicken is fully cooked and has developed a nice golden-brown color. Remove the chicken from the skillet and transfer it to a plate; set it aside.
Sauté the Vegetables: In the same skillet, add the remaining tablespoon of sesame oil. Add the mixed vegetables along with the minced garlic and grated ginger. Stir-fry the mixture for about 3-4 minutes or until the vegetables are vibrant and tender-crisp, ensuring they retain some bite for texture.
Combine Ingredients: Return the cooked chicken to the skillet with the sautéed vegetables. Pour in the soy sauce, optional oyster sauce, and sprinkle the sugar over the mixture. Use a spatula to stir everything together, ensuring all ingredients are well coated and heated through, about 2 minutes.
Add Noodles: Gently fold in the cooked noodles, ensuring each strand is coated with the flavorful sauce and mixed thoroughly with chicken and vegetables. Continue to stir-fry for an additional 2-3 minutes until everything is heated evenly.
Finish and Serve: Remove the skillet from heat. Add the chopped green onions to the mixture, tossing lightly to combine. Serve your delicious chicken lo mein hot, and for an elegant touch, garnish with sesame seeds sprinkled on top.
