Instructions
In a medium bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, and salt. Mix until well combined and smooth.
Line a baking sheet with parchment paper for easy removal later.
Take a blueberry, dip it into the Greek yogurt mixture, ensuring it's fully coated. Use a fork for easier handling if necessary.
Place the yogurt-covered blueberry on the prepared baking sheet. Repeat the process until all blueberries are coated.
If desired, melt some dark chocolate chips in the microwave or a double boiler and drizzle over the coated blueberries for an extra touch.
Place the baking sheet in the freezer and allow the bites to freeze for at least 2-3 hours, or until solid.
Once frozen, you can transfer the blueberry bites to an airtight container or zip-top bag and keep them in the freezer for future snacking.
Notes
Serve these frozen bites on a platter for a refreshing snack or dessert. Garnish with a few fresh blueberries and a sprig of mint for added color and appeal!
