Instructions
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
Remove the leaves from the cauliflower and trim the stem, ensuring the head can sit flat.
Carefully slice the cauliflower into thick 'steaks,' about 1-inch wide, starting from the center. You should be able to get 2 to 3 large steaks.
In a small bowl, mix olive oil, minced garlic, oregano, thyme, smoked paprika, salt, and pepper until combined.
Brush each cauliflower steak generously with the garlic herb mixture on both sides, ensuring even coverage.
Place the cauliflower steaks on the prepared baking sheet. If you have extra florets from cutting, feel free to toss them on the sheet as well.
Roast in the preheated oven for 25-30 minutes, flipping the steaks halfway through, until they are golden brown and tender.
Remove from the oven and garnish with freshly chopped parsley. Serve hot with lemon wedges on the side for squeezing over.
