Instructions
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a shallow bowl, combine flour, garlic powder, onion powder, paprika, salt, and black pepper. Mix well.
In another bowl, whisk the eggs until well beaten.
In a third bowl, mix the breadcrumbs with the grated Parmesan cheese.
Dip each piece of chicken into the seasoned flour, shaking off any excess.
Next, dip the floured chicken into the beaten eggs, allowing any excess to drip off.
Finally, coat the chicken in the breadcrumb-Parmesan mixture, pressing gently to adhere the crumbs.
Place the coated chicken bites on the prepared baking sheet, leaving space between each piece.
Drizzle the olive oil over the chicken bites for added flavor and crispiness.
Bake in the preheated oven for about 15-20 minutes or until the chicken is golden brown and cooked through.
Remove from the oven and garnish with freshly chopped parsley before serving.
Notes
Use Panko breadcrumbs for extra crunch.
