Preheat your oven to 350°F (175°C) and lightly grease a loaf pan.
In a skillet, heat the olive oil over medium heat. Add the chopped onions and minced garlic, sautéing until the onions are translucent (about 4-5 minutes). Remove from heat and let it cool slightly.
In a large mixing bowl, combine the ground chicken, breadcrumbs, grated Parmesan cheese, chopped parsley, sautéed onion and garlic mixture, egg, milk, Italian seasoning, salt, and pepper.
Mix everything together until just combined, being careful not to overwork the meat.
Transfer the mixture into the prepared loaf pan and shape it into a loaf. Spread the ketchup evenly over the top for a flavorful glaze.
Bake in the preheated oven for 45-50 minutes, or until the meatloaf is cooked through and the internal temperature reaches 165°F (75°C).
Once done, allow the meatloaf to rest for 10 minutes before slicing.
Notes
For an appealing presentation, serve slices of the meatloaf on a platter garnished with fresh parsley and some additional Parmesan cheese. Accompany with a side of roasted vegetables or a simple salad.
