In a small bowl, combine minced garlic, oregano, thyme, paprika, and a pinch of salt and pepper. This will be your flavor base.
Rub the garlic mixture evenly over the chicken breasts, making sure to coat both sides.
In a separate bowl, toss the diced potatoes with olive oil, half of the Parmesan cheese, salt, and pepper until evenly coated.
In a large baking dish, place the seasoned chicken breasts and surround them with the seasoned potatoes.
Bake in the preheated oven for 25-30 minutes or until the chicken is fully cooked (internal temperature of 165°F / 74°C) and the potatoes are golden and tender.
In the last 5 minutes of baking, sprinkle the remaining Parmesan cheese over the chicken and potatoes for a cheesy crust.
Once cooked, remove from oven and let it rest for a few minutes. Garnish with freshly chopped parsley before serving.
