14cup mini chocolate chips (plus extra for topping)
Instructions
Preheat your oven to 350°F (175°C) and grease a 9x9 inch baking pan or line with parchment paper for easy removal.
In a large mixing bowl, combine the creamy peanut butter, applesauce, brown sugar, honey, and vanilla extract. Mix until smooth and well combined.
In a separate bowl, whisk together the rolled oats, flour, baking powder, and salt.
Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.
Fold in the mini chocolate chips until evenly distributed throughout the batter.
Pour the mixture into the prepared baking pan and spread it evenly with a spatula. If desired, sprinkle a few extra chocolate chips on top for garnish.
Bake in the preheated oven for 20-25 minutes or until the edges are lightly golden and a toothpick inserted in the center comes out clean.
Remove from the oven and let the bars cool in the pan for about 10 minutes before transferring them to a wire rack to cool completely.
Once cool, slice into squares or bars and enjoy!
Notes
Serve bars on a beautiful wooden platter and sprinkle with a bit of crushed nuts or a drizzle of honey for an appealing presentation.
