In a mixing bowl, combine the flour, baking powder, sugar, and salt. Whisk together until well blended.
In another bowl, whisk together the milk, egg, melted butter, and vanilla extract.
Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix; some lumps are okay.
Preheat a non-stick skillet or griddle over medium heat and lightly grease it with a bit of butter or cooking spray.
For each McGriddle cake, pour about 1/4 cup of the batter onto the skillet. Cook for 2-3 minutes until bubbles form on the surface.
Flip the cakes and cook for an additional 2-3 minutes or until golden brown. Repeat until all batter is used.
In the same skillet, add the sausage patties and cook until browned on both sides, about 3-4 minutes total.
To assemble, place one pancake on a plate, add a sausage patty, a slice of cheese, and drizzle with maple syrup. Top with another pancake and repeat for the remaining ingredients.
