Instructions
Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line it with parchment paper.
In a medium bowl, combine the rolled oats and milk. Let this mixture sit for about 10 minutes to allow the oats to soak and soften.
In a separate large bowl, whisk together the melted butter, honey, egg, and vanilla extract until thoroughly combined.
Add the soaked oat mixture into the wet ingredients, mixing until well integrated.
In another bowl, whisk together the all-purpose flour, baking soda, salt, ground cinnamon, and brown sugar until evenly mixed.
Gradually add the dry mixture to the wet mixture, stirring until just combined. If using, fold in the chopped nuts for added texture.
Pour the batter into the prepared loaf pan and smooth the top with a spatula.
Bake in the preheated oven for 50-60 minutes or until a toothpick inserted into the center comes out clean.
Allow the bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely before slicing.

Serve warm with a drizzle of honey or a pat of butter.
