2mediumsweet potatoes, peeled and diced
1mediumred bell pepper, chopped

Instructions
Heat olive oil in a large skillet over medium heat. Add the diced sweet potatoes and season with salt and pepper. Sauté for about 10-12 minutes, stirring occasionally, until they start to soften and slightly brown.
Add the sliced sausage to the skillet with the sweet potatoes, and cook for an additional 5 minutes until the sausage begins to brown.
Stir in the chopped onion and red bell pepper. Cook for another 5 minutes until the vegetables soften.
Add the minced garlic, honey, and smoked paprika to the skillet. Stir well to coat the sausage and vegetables evenly. Cook for an additional 3-4 minutes, allowing the honey to caramelize slightly and the flavors to meld.
Taste and adjust seasoning with more salt and pepper if needed.
Remove from heat and garnish with chopped fresh parsley before serving.
Notes
Serve in bowls with a sprinkle of parsley on top and a drizzle of additional honey for an attractive finish. Enjoy!
