In a bowl, combine honey, minced garlic, soy sauce, lime juice, chili powder, salt, and pepper. Whisk until well mixed to create the marinade.
Add the shrimp to the bowl and toss them in the marinade. Allow the shrimp to marinate for about 15-20 minutes to absorb the flavors.
Heat a non-stick skillet over medium-high heat. Add the marinated shrimp to the skillet and cook for 2-3 minutes on each side, or until the shrimp turn pink and are cooked through. Remove from heat.
While the shrimp are cooking, warm the tortillas on a separate skillet for about 30 seconds on each side or until pliable.
Assemble the tacos by placing a few shrimp on each tortilla, followed by a generous handful of sliced red cabbage and avocado slices.
Garnish with fresh cilantro and a squeeze of lime juice over the top.
