Instructions
In a large bowl, combine olive oil, minced garlic, lemon juice, lemon zest, oregano, red pepper flakes, salt, and pepper. Mix well to form a marinade.
Add the chicken pieces to the marinade and toss until they are thoroughly coated. Cover the bowl and let it marinate in the refrigerator for at least 30 minutes (or up to 2 hours for deeper flavor).
Preheat a non-stick skillet or frying pan over medium-high heat.
Once hot, add the marinated chicken pieces in a single layer. Cook for about 5-7 minutes, stirring occasionally, until the chicken is golden brown and cooked through (internal temperature should reach 165°F/75°C).
Remove from heat and garnish with chopped fresh parsley before serving.
Notes
Serve the chicken bites on a platter, drizzled with any remaining marinade and sprinkled with extra lemon zest and parsley for a pop of color.
