chickpeas, drained and rinsed

lemon

smoked paprika

Instructions
Preheat your oven to 400°F (200°C).
Pat the chickpeas dry with a clean towel to ensure they crisp up nicely.
In a mixing bowl, combine the olive oil, minced garlic, lemon zest, lemon juice, smoked paprika, salt, and pepper.
Add the chickpeas to the bowl and toss them well to coat evenly with the seasoning mixture.
Spread the seasoned chickpeas in a single layer on a baking sheet lined with parchment paper.
Roast in the oven for about 20-25 minutes until they are golden brown and crispy, shaking the pan halfway through to ensure even cooking.
Once out of the oven, let them cool for a few minutes, then taste and adjust the seasoning if necessary.
Garnish with chopped fresh parsley before serving.
