Instructions
In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
In a separate bowl, mix the milk, egg, and melted butter until smooth.
Pour the wet ingredients into the dry ingredients. Stir gently until just combined; it’s okay if there are a few lumps.
Heat a non-stick skillet or griddle over medium heat and add a little butter to the surface.
Pour about 2 tablespoons of batter onto the skillet for each pancake.
Allow the pancakes to cook for about 1-2 minutes or until small bubbles form on the surface.
Using a teaspoon, place a small dollop of Nutella in the center of the pancake, then cover it with another tablespoon of pancake batter.
Flip the pancake carefully and cook for an additional 1-2 minutes until golden brown on both sides.
Repeat with the remaining batter and Nutella, greasing the skillet as necessary.
Serve the mini pancakes warm, dusted with powdered sugar and topped with fresh berries if desired.
