In a mixing bowl, combine the rolled oats, ground flaxseed, and a pinch of salt.
Add in the peanut butter, honey (or maple syrup), and vanilla extract. Stir until the mixture is thoroughly combined. It should be sticky and hold together.
If using, fold in the dark chocolate chips and shredded coconut until evenly distributed.
Use your hands to form the mixture into small balls, about the size of a golf ball. Make sure they are compact to avoid them falling apart.
Place the rolled energy bites on a baking sheet lined with parchment paper.
Refrigerate for about 30 minutes to firm up the energy bites.
Once set, transfer the bites to an airtight container for storage.
