In a large pot, heat the olive oil over medium heat. Add the sliced sausage and cook until browned and cooked through, about 5-7 minutes. Remove the sausage and set aside.
In the same pot, add the diced onion, garlic, and bell pepper. Sauté until the vegetables are soft, about 3-4 minutes.
Stir in the diced tomatoes (with juices), chicken broth, and Cajun seasoning. Bring the mixture to a boil.
Add the penne pasta to the pot and reduce the heat to a simmer. Cover and cook for about 12-15 minutes, stirring occasionally, until the pasta is cooked al dente.
Once the pasta is cooked, stir in the heavy cream and cooked sausage. Cook for another 2-3 minutes until heated through.
Remove from heat and stir in the shredded cheddar cheese until melted and creamy. Adjust seasoning with salt and pepper to taste.
Serve immediately, garnished with fresh chopped parsley.
