One-Pot Creamy Tuscan Gnocchi

Instructions
In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
Stir in the minced garlic and cook for an additional 1 minute until fragrant.
Add the halved cherry tomatoes to the pot and cook until they start to soften, about 3-4 minutes.
Pour in the vegetable broth and stir until combined, bringing the mixture to a simmer.
Add the gnocchi to the pot, and stir gently. Cook for 3-4 minutes until the gnocchi rise to the surface.
Reduce the heat to low and stir in the heavy cream and grated Parmesan cheese. Mix well until the cheese melts, creating a creamy sauce.
Add the fresh spinach and Italian herbs, stirring until the spinach wilts. Season with salt and pepper to taste.
Remove from heat and allow to sit for a minute to thicken.
Serve hot, garnished with fresh basil.
Notes
For a vegan option, use a dairy-free cream and nutritional yeast instead of Parmesan.
