Instructions
In a mixing bowl, combine the rolled oats, almond milk, pumpkin puree, maple syrup, pumpkin spice blend, vanilla extract, chia seeds (if using), and a pinch of salt.
Stir the mixture well until all the ingredients are fully incorporated and the oats are covered with the liquid.
Divide the mixture into two or three jars or containers with lids.
Seal the jars or containers with their lids and place them in the refrigerator. Let them soak overnight, or at least 6-8 hours, to allow the oats to soften and absorb the flavors.
In the morning, give the oats a good stir. If they are too thick, feel free to add a splash more of almond milk to achieve your desired consistency.
Top with your choice of chopped pecans, walnuts, or coconut flakes for an extra crunch and flavor.
Notes
Serve in clear jars to showcase the vibrant orange color of the pumpkin oats, and garnish with a sprinkle of pumpkin spice on top for visual appeal.
