In a bowl, mix the soy sauce, honey, sesame oil, garlic, ginger, salt, and pepper. Add the chicken slices, coating them well. Let them marinate for at least 15 minutes.
While the chicken marinates, wash and chop the broccoli and bell pepper.
Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir-fry for about 5-7 minutes, or until the chicken is cooked through and no longer pink. Remove the chicken from the skillet and set aside.
In the same skillet, add the remaining olive oil. Add the broccoli florets and sliced bell pepper. Stir-fry for about 4-5 minutes, or until the broccoli is bright green and tender-crisp.
Return the chicken to the skillet, mixing it with the vegetables. Stir in any remaining marinade and cook for an additional 2-3 minutes, just to heat everything through.
Sprinkle sesame seeds and fresh cilantro on top before serving.
