1tablespoonsesame oil
2clovesgarlic, minced
1tablespoonfresh ginger, grated
1mediumred bell pepper, finely diced
1cupscallions (green onions), chopped
14 cupsoy sauce (or tamari for gluten-free)
1tablespoonhoisin sauce
1teaspoonsriracha (optional, for spice)
1headbutter or iceberg lettuce, leaves separated
14 cupcilantro, chopped (for garnish)
1cupcrushed peanuts or cashews (for garnish)
Instructions
Heat the sesame oil in a large skillet over medium-high heat.
Add the minced garlic and grated ginger, sautéing for about 30 seconds until fragrant.
Add the ground beef, cooking it through and breaking it up with a spatula until browned, about 5-7 minutes.
Stir in the diced red bell pepper and cook for an additional 2-3 minutes until the pepper softens.
Pour in the soy sauce, hoisin sauce, and optional sriracha. Mix well and allow to cook for another 2 minutes until everything is well combined and heated through.
Remove from heat and stir in the chopped scallions and cilantro.
To serve, spoon a generous amount of the beef mixture onto a lettuce leaf, wrap it up like a taco, and top with crushed peanuts or cashews for added crunch.
Notes
Arrange the filled lettuce wraps on a platter. Add a small bowl of additional hoisin sauce or sriracha on the side for dipping, and garnish with extra cilantro for a fresh pop of color.
