Instructions
Preheat your oven to 350°F (175°C) and prepare a muffin tin by greasing with cooking spray or lining with muffin liners.
In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
In a separate bowl, mix the buttermilk, egg, and melted butter until smooth.
Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; a few lumps are okay.
Fold in the crumbled sausage, shredded cheddar cheese, and chopped green onions for added flavor and texture.
Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
Bake for 18-20 minutes or until the muffins are golden brown and a toothpick inserted in the center comes out clean.
Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
Notes
Serve warm, optionally with a drizzle of maple syrup or a dollop of sour cream for dipping.
