Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a medium bowl, whisk together the rolled oats, flour, baking soda, cinnamon, and salt. Set aside.
In a large mixing bowl, cream together the softened butter, honey, and brown sugar until smooth and well combined.
Beat in the egg and vanilla extract until fully incorporated.
Gradually mix the dry ingredients into the wet mixture, stirring until just combined. If desired, fold in the raisins or chocolate chips at this point.
Using a cookie scoop or tablespoon, drop spoonfuls of cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden. The centers might look slightly underbaked; they will firm up as they cool.
Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
Arrange the cookies on a decorative plate and drizzle with a little extra honey for a tempting look. You can also sprinkle a pinch of cinnamon on top for a warm finish. Enjoy!
