In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, cinnamon, and salt until well combined.
In a separate bowl, mix the milk, eggs, melted butter, and vanilla extract. Whisk until the mixture is smooth.
Gradually pour the wet ingredients into the dry ingredients, stirring gently to combine until just mixed. Be careful not to overmix; small lumps are okay.
Heat a non-stick skillet or griddle over medium heat and lightly grease it with oil or butter.
Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface (about 2-3 minutes), then flip and cook the other side until golden brown (another 2-3 minutes).
Once cooked, place the pancakes on a warm plate and cover them to keep warm while you cook the remaining pancakes.
On a plate, mix the confectioners' sugar with additional cinnamon. Once all pancakes are cooked, dust them generously with the cinnamon sugar mixture.
