Spicy Gochujang Chicken Lettuce Wraps

Instructions
In a large skillet over medium heat, add sesame oil. Once heated, add minced garlic and grated ginger, sauté for about 1 minute until fragrant.
Add the ground chicken to the skillet, breaking it apart with a spatula. Cook until browned and fully cooked, about 5-7 minutes.
Stir in gochujang, soy sauce, rice vinegar, and honey (or maple syrup). Mix well to coat the chicken evenly.
Add the diced red bell pepper and shredded carrots. Cook for an additional 2-3 minutes until the peppers soften slightly.
Season with salt and pepper to taste. Stir in chopped green onions just before removing from the heat.
To assemble the wraps, spoon a generous amount of the spicy chicken mixture onto a lettuce leaf.
Sprinkle with sesame seeds for garnish, and if desired, top with extra green onion.
Notes
Serve with additional gochujang on the side for those who like it extra spicy. Enjoy as a vibrant appetizer or light main dish!
