Instructions
Preheat your oven to 375°F (190°C). Line two baking sheets with parchment paper.
In a small bowl, stir together flour, baking soda, baking powder, and salt. Set aside.
In a large mixing bowl, cream together the softened butter and the white sugar until smooth.
Beat in the egg, vanilla extract, and almond extract (if using) until well combined.
Gradually blend the dry ingredients into the wet mixture. Stir in the colored sprinkles, reserving some for topping.
Roll rounded tablespoonfuls of dough into balls, and place them on the prepared baking sheets, about 2 inches apart.
Flatten each ball slightly and add a few extra sprinkles on top for decoration.
Bake for 8 to 10 minutes, or until the edges are lightly golden.
Remove from the oven and allow to cool on the baking sheets for 5 minutes before transferring to wire racks to cool completely.
Notes
For extra flavor, you can add almond extract, but it's optional.
