Preheat your oven to 425°F (220°C). Spread the frozen tater tots on a baking sheet in a single layer and bake according to package instructions until crispy, usually about 20-25 minutes.
While the tater tots are baking, heat olive oil in a skillet over medium heat. Add the chopped spinach and sauté for 2-3 minutes until wilted. Season with salt and pepper, then transfer to a bowl and set aside.
In the same skillet, crack the eggs and cook to your liking—scrambled, sunny-side up, or fried—season with salt and pepper. If you like your eggs cheesy, sprinkle cheddar cheese over the eggs just before they finish cooking to melt it.
Once the tater tots are done, remove them from the oven and let them cool slightly.
To assemble the bowls, start with a layer of crispy tater tots, then add the sautéed spinach, cooked eggs with melted cheese, cherry tomatoes, diced avocado, and sliced green onions.
If desired, top with salsa for an extra kick of flavor.
