In a greased 9x13-inch baking dish, spread half of the frozen tater tots in an even layer.
Layer the cooked sausage evenly over the tater tots. Then, sprinkle the diced bell peppers and onions on top.
Pour the egg mixture over the sausage and vegetable layers, ensuring it covers everything evenly.
Top with the remaining tater tots, pressing them down slightly. Sprinkle shredded cheddar cheese generously over the top.
Bake in the preheated oven for 35-40 minutes or until the casserole is set and the cheese is melted and bubbly.
Allow to cool for a few minutes before cutting into squares. Garnish with fresh parsley.
