diced bell peppers (mixed colors)

Instructions
In a medium bowl, whisk together the eggs, milk, salt, and pepper until well combined.
Heat olive oil or butter in a non-stick skillet over medium heat.
Add the diced bell peppers and sauté for 2-3 minutes until they soften.
Pour the egg mixture into the skillet, and gently stir to scramble for about 3-4 minutes, or until the eggs are fully cooked.
Remove from heat and stir in the chopped spinach and half of the shredded cheese until melted and combined.
Lay the large tortilla flat on a clean surface. In the center, add the egg mixture, sliced avocado, and the remaining shredded cheese.
Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom to the top to form a wrap.
If desired, place the wrap back in the skillet to toast for 1-2 minutes on each side until golden brown and crispy.
Slice in half and drizzle with hot sauce if desired before serving.
